Hey Sydney! If you double the recipe you might get 4 layers. The cake pictured is made with mini loaf pans. They are the width of a standard cake but the diameter is smaller. With 9" pans I'd definitely double it. Hope it works out and happy birthday cake-ing!

I have to say, I have now made this recipe 3 times, twice as cake and once as cupcake. I also use your ermine buttercream with cocoa and oreos to frost, and can I just say it is a HUGE HUGE hit each time.
